Healthy Summer Eating…How to eat great tasty food and lose weight…

I love those songs they both epitomise sunny days. leisurely eating with friends and family… What are your favourite summer songs??

It also means enjoyable food and drinks…Food and drinks which are tasty and fun to eat… which when you have eaten leaves you pleasantly full but still able to play ball…stroll around the park in the sun or just be…

I love a nice iced tea…Green tea with a splash of fresh orange or lime juice, muddle some mint sprigs add some ice and top with sparkling water… Refreshing and healthy…

Or cucumber and mint is a lovely combo with sparkling water …

Fresh Coconut juice…One of my favourites… there are so many lovely drinks which are so easy to make either for one or make a jug full… Play with your flavours …Freeze some orange, pomelo, lemon or lime slices and just drop in your sparkling water…

Puree some lovely fresh ripe mango, pineapple, papaya and top up with ice and sparkling water with some lime juice anything goes …Have fun and create…

Not sweet enough add a little honey…

Now to food...What to eat… Take some lovely zucchini noodles…

Stick some chicken fillets on the BBQ or under the grill and add some pesto …quick, easy, tasty and healthy…Below are my recipes for a green or pesto and some lovely light dishes using fresh herbs…

One of my favourite things are roasted lemons… the taste is sublime and cannot be beaten for me anyway it just sings of sunny days…

Roasted lemon and tomato salad

Ingredients:

  • 1 lemon, halved lengthwise, thinly sliced, seeds removed
  • 1 tbsp thinly sliced fresh sage leaves
  • ½ tsp sugar
  • 2 tbsp olive oil, divided
  • 1 tbsp pomegranate molasses
  • ½ tsp ground allspice
  • Kosher salt and freshly ground black pepper
  • 1½ pounds mixed small tomatoes halved
  • 1 small red onion, thinly sliced
  • ¼ cup fresh flat-leaf parsley leaves with tender stems
  • ¼ cup fresh mint leaves

Let’s Cook!

Pre-heat the oven 325F 160C

Add the lemon slices to a saucepan of boiling water and blanch for 2 mins…This removes the bitterness…Remove from the heat and pat dry.

Gently toss the lemon slices with the sage, sugar and 1 tbsp of olive oil then spread out on a baking tray lined with parchment and bake until lemons are dry and lightly coloured about 15-20 mins then set to one side to cool.

In a large bowl whisk the pomegranate molasses, allspice and 1 tbsp of olive oil season well with salt and freshly ground black pepper.

Add the lemons, onion, tomatoes, parsley and mint..if mint leaves are large then tear toss gently to combine…

Taste to check seasoning and add more salt and pepper if required.

Enjoy!

Stuck for a tasty dressing this one is quick, easy and delicious…

  • 1 tbsp extra virgin olive oil
  • 2 tbsp Apple cider vinegar
  • 2 tbsp chopped mint
  • 3 tbsp chopped basil
  • 1/2 cloves garlic finely chopped
  • 1 tbsp capers.

Lets mix!

Measure all your ingredients into a bowl gentle muddle the herbs and capers to release the flavours…Season with freshly ground black peppers and use to season your favourite salad…

Lovely over a salad topped with some grilled sliced chicken or sliced grilled steak…

Healthy Eating…No more diets…

No more...Diets Healthy eating (1)

Wow, what a week… They are all out and safe …Just in case you have been cocooned somewhere away from the maddening crowd and don’t know what I am talking about… The Thai boys and their teacher who were trapped in a cave near where I live…It must have been so scary for them not knowing if help was coming…But it did …Do you know what pleased me the most ???

It was how the whole world united and that made me so happy…Sad for the brave Ex-Navy Seal who lost his life such a brave man…R.I.P … You will always be remembered for your bravery…

I have shed a few tears these last few weeks…AND

The healthy eating? … That went out the window…She who doesn’t eat crisps..DID…She who doesn’t really snack…DID!

I was fixated on the news but with consequences…

I now feel really out of sorts…Tired, sluggish, really tired…No Energy… Zilch!

What am I doing about it?? Well, Sally’s post this week was very timely ( For Moi) I am going to detox and get back on track…

Who do you cheat??? Yourself!

There is so much written about what we should eat and what we shouldn’t eat, how much sugar or salt foods contain, how much of this, how much of that…I can’t blame anyone for feeling like ..What do we eat then?

How did you get on after reading last weeks post?? Did you start any herbs or plants? Did you find any communal gardens  I always love to hear how you are getting on in comments and not just the good … We all have days or weeks we rather forget…

Below are just a few small ways you can start to make changes it covers a few of the main food groups things most of us eat or cook with on a regular basis and often there are so many choices for alternatives that we at loss as to what we can replace our regular food with. I hope this makes it a little easier for you.

I am also not going to bombard you with statistics and ingredients we can all look at a bottle or a can to see what is in it…If we don’t know ..google it… ask…question…we should all know what we are eating and feeding our families…It is then our choice as to whether we change or continue.

Sugary drinks…

Expensive I hear you say ….no it is not… Most of what we eat is taught to us…we teach our children, our parents taught us…some folks when they grow older make their own choices…That’s fine…but make an informed choice and try an alternative you may like it.

Water is healthy. Coffee and tea are healthy it is maybe what you put in it which is NOT.

Soda water with ice and lime or lemon is a nice refreshing drink. Freeze some fruit orange slices or pomelo fruit, and pop it in the glass with the soda water..very nice and refreshing.

Some nice green tea now I know how to brew it correctly…No more bitter green tea for me … I also love the way it is drunk and am on the hunt for a nice green tea set like the one pictured it just makes you feel special …I think so anyway and makes it pleasurable.

Coconut juice and yes I am lucky I have a tree and can go buy it fresh but you must have something where you live which is in season, fresh and you can juice or make into a smoothie.

So ditch the soda and think about what you can drink, think about what you like to drink…That is healthier than those sugar-laden sodas.

Pizza…One of the unhealthiest foods on the planet…

Does that mean you can never eat Pizza again…No!

Make homemade pizza instead ..Let the kids help… Make your own pizza sauce by pureeing cooked, peeled tomatoes with oregano and fresh garlic  Use low-fat mozzarella cheese so that your child gets plenty of calcium from his slice without all of the saturated fat. Skip the pepperoni and high-fat meats and add some chicken or prawns and add their favourite vegetables.  If they like olives even better add black olives for some heart-healthy unsaturated fat. One of my grandsons absolutely loved olives from the age of about one and a half, instead of sweets I used to buy him olives…

Make your own base…I have made a cauliflower base and it is lovely, Portobello mushrooms, a sweet potato base..there are so many options for bases some for another post…..It is all about experimenting and playing with flavours, food should be fun and especially Pizza because it really is a fun food ..isn’t it???

Cauliflower Pizza Base…

Ingredients:

  • 1 medium head cauliflower.
  • 1 egg, large.
  • 1 tsp Italian seasoning (dried oregano or basil)
  • 1/8 tsp salt.
  • 1/4 tsp ground black pepper.
  • 1/2 cup Parmesan or Mozzarella cheese, grated/shredded.
  • Cooking spray, I make my own spray I don’t do bought oil in spray cans…I have a little stainless steel one for oil.

Let’s Cook!

Preheat the oven to 375 degrees F/190 C and line a baking sheet with unbleached parchment paper.

Rinse cauliflower, remove the outer leaves, separate into florets and chop into smaller pieces. Process in a food processor in 2 batches, until “rice” texture forms.

Transfer cauliflower rice on a prepared baking sheet and bake for 10 mins this just removes some of the moisture.

Remove cooked cauliflower rice from the oven, transfer to a bowl lined with a double/triple layered cheesecloth or linen towel, and let cool for 5 minutes.

Then squeeze the liquid out of the ball as hard as you can. Be patient and do this a few times until barely any liquid comes out.

Increase oven temperature to 4 degrees F/200 C. Then in a medium mixing bowl whisk the egg with dried herbs, salt and pepper for 10 seconds. Add cheese and squeezed cauliflower mix very well with a spatula until combined.

Line the same baking sheet with new parchment paper and spray with cooking spray. Transfer cauliflower dough to the middle and flatten with your hands until thin pizza crust forms.

Bake for 20 minutes, carefully flip with a spatula and bake for a few more minutes. Top with your favourite toppings and bake again until cheese on top turns golden brown.

Slice and enjoy!

Let the kids help you can never second guess a child and what they will like.  Encourage them to help prepare their food…They are more likely to eat what they help prepare.

Start them young here is Little Lily… although she is not so little now she still loves to cook and always eats what she cooks…You also have happy kids …

N.B. Just a little note it took me a couple of trial runs before I got the base the right thickness I don’t like thick crust but made it too thin at first…

Bread…

If you love white bread, opt for a brand that is made with UNbleached white flour. Or try the bread with 100% whole grain unbleached wheat flour–

Or treat yourself to some of the lovely artisan loaves of bread available or make your own..with rapid, instant yeast it is now much easier and there are also so many recipes for sourdough starters…

Also, there is nothing more satisfying than making bread…It is great when your mood is less than happy a bit of kneading that dough works wonders…lol

If you are on a particular diet for health reasons or a food intolerance it can be a minefield I hope this helps

Gluten-free junk food…

Is high in sugar, unhealthy oils, and refined grains. I think that it is abhorrent that manufacturers make foods which they know that many people with a gluten intolerance buy and that is actually very unhealthy. Some people choose to take the label “gluten-free” to mean the same things as “healthy,” which is not accurate.

Naturally, gluten-free foods include beans, pulses, milk, yoghurt, cheese, fish, shellfish, fruit, meat, poultry, nuts, seeds, butter, and oil.

I hope this has been of help when you are deciding which is healthier to eat and it doesn’t mean expensive foods it generally means fresh either home-grown or bought from local markets, food in season or food you have made in your own kitchen.

If you are out and about or at work take your own in a little-insulated bag to keep it fresh and find a nice park bench or a little seat somewhere to eat and watch the world go by.

Healthy Eating…No to diets…Eat yourself slim…

Welcome to No More Diets …Just healthy eating and of course moderation… I think it is time many of us woke up and realised that many of the chronic diseases today are caused by our lifestyles and what we eat… We are allowing these manufacturers to get away with murder as that is what it can amount to…Gone are the days when we could buy food safe in the knowledge that it was good for us…

We may be busy and work 24/7 or not have much money to spare but healthy eating requires thought and action and need not be expensive.

The kids don’t like vegetables or salad or ?????

If they are hungry they will eat… If they help grow or prepare and cook their food…They are more likely to eat it… We need to be sneaky as parents…Yep, you heard…A slice of tomato or beetroot, a piece of carrot in their smoothie and they won’t know they will just love the taste…Who doesn’t love a smoothie?? But it gets that veg down them and as they get older …tell them the truth…

Generally, fussy parents begat fussy kids so before you say you don’t like something think you might be making your kids even fussier!

Where to start???

I would start by clearing my food cupboards, fridge and freezer… Read the packets, look up the words you don’t know do a little research, learn how they affect the human body and our kids, learn what chronic diseases they are linked to…Take charge…Decide what preservatives and chemicals you or your children shouldn’t be exposed to… Know what foods they are in… Boycott those foods…Don’t buy them…

Think about what your foods and drinks come in… I no longer buy tinned tomatoes as the white coating inside the tin is known to leach into the food…I make my own save lots of money and freeze in portions. Plastic is also a big no no in my house and here’s why…

But before you start thinking that I am paranoid and don’t eat anything nice …I am as regards what is in my food but we love the food we eat, we eat healthily, we eat good food and chocolate …sometimes it is too hot and sticky here for chocolate though and that sort of puts me off but I love ice cream…

You can eat the food you love maybe with a healthier tweak or two and a bit of moderation but there is nothing I deprive myself of at all…

So you clear your cupboards and the kids are moaning because they really love something you have chucked out…. Look up the recipe… You will be as surprised as I am just how easy most things are to make and they don’t take long…

For example:-

Peanut Butter: How many of you love peanut butter?? How many of you have kids who love peanut butter??

Shop bought Peanut butter contains...Roasted Peanuts, Soybean Oil, Corn Maltodextrin, Sugar, Hydrogenated Vegetable Oil (Cotton Seed And Rapeseed Oil), Salt, Mono And Diglycerides. 

Homemade Peanut Butter contains… Roasted Peanuts, Oil ( of your choice) Salt.

Well, a difference in ingredients there isn’t there?? Below is my recipe and it is so easy to do and the taste is so much better… If the kids like the chocolate swirl some in..easy.my recipe explains it all ♥

Peanut butter is the easiest thing to make and takes 15-20 minutes the kids can help it is easy and NO nasties…

So many store-bought products are so easy to make, generally much cheaper and no it doesn’t have the shelf life but what cost is a long shelf life when that jar full of preservatives would probably outlive you if you do not start doing something.

Start small and think about what you can do...I am not saying never ever eat a burger again…I am saying make your own.

Living here has forced my hand somewhat but also opened my eyes to how much I can make easily, cheaper and that is better for our health. I don’t spend hours in the kitchen it is too damn hot…

I plan…

I make extra and freeze into portions…ideal if you work all you need to do is spend a Saturday once a month and plan and freeze.

It will save you precious time and money and you will be healthier. Do you live in an inner city as many of you do and don’t get so many bargains or have a garden… I haven’t always had a huge garden…I grew potatoes in bags and veg in pots or hanging baskets so many ideas online…Only got a balcony ??? Even if you only grow fresh herbs and tomatoes it is a start. Many places now in inner cities are using rooftops and they have amazing gardens…Communal gardens ask around to see if there are any schemes you can join or start your own. All you need is a small area with a few willing hands also an ideal way to make friends and learn about gardening etc.

Container gardening is very popular now and if you have sunny window sill then it is ideal to grow your favourite herbs …Strawberries grow well in hanging baskets and look lovely… Go on Pinterest to get ideas and use anything an old wheelbarrow even an old WC pan anything and it makes the place look so pretty.

How useful did you find the post on Tofu last week I found it useful as I knew absolutely nothing but thanx to Victoria I now know more about tofu…If I am honest I am never probably going to be the biggest fan but I will persevere and the lovely Esme has given me some tried and tested Tofu recipes which I am sure are very nice here is one for squash and tofu.

Healthy Eating…No More Diets…Obesity … The Cook Islands and Timor Leste.

Welcome back to Carol’s Bootcamp…I can’t think why I called it that as this is not about being on a diet but Healthy Eating  I know some people like structure but at some point you will either get fed up with the restrictions of the said diet  pile the pounds back on or spend the rest of your life eating foods which you don’t really enjoy but they are supposed to be good for you… Well, to hell with all that!

Life is for living…Food is for enjoying…

I have decided to do is some comparisons …It started with a headline about obesity. Country by country and percentages and then I got to thinking about the difference in lifestyles and options or just what we have always eaten..But then those stats began to make sense to me…

Today is my final post on this and I am comparing The Cook Islands who stand at number 1( and that) my friends does not deserve any accolades as at 50.80% and rising rapidly and Timor Leste who are bottom at 192 on the chart. with only 2.2%…that is a tragedy….sad beyond belief…

The very beautiful Cook Islands are home to the Maori whose agricultural lands have been replaced by luxury resorts and tourism over the last 30 years has boomed…From a diet of fresh fish, tomatoes, pawpaw and taro this once healthy nation now prefer fast food and chips…

The effect of tourism and loss of agricultural lands means that the islands are 82% food import-dependent…fresh food has been replaced by calorie rich, nutrient poor processed foods and sugary drinks…

The most recent figures are horrifying with 80/90% of men classed as obese, school children..24% of girls are obese and for the boys, that figure is even higher at 24& it is no wonder that many are diabetic…High Cholesterol, high blood pressure, diabetes and heart disease are the leading cause of death here.

The ministry of health is working with world health organisations and work is being done to encourage islanders to be self-sufficient and grow their own food… will it be too little too late?? I do hope we can get back some of the attributes of a once proud traditional race who are healthy and chronic disease free.

These once proud, healthy Maori have now succumbed to the unhealthy diets of the western world and at a devastating cost to their health and well-being.

The other side of the coin is Timor Leste who on the face of it should be commended for their low obesity rate, however, there is a lot of poverty here, the diet is rice based with maybe one green vegetable so nutrient-poor hence malnutrition and anaemia is a leading cause of premature deaths.

The incidence of stunting is also very high here but there is work going on to educate young mothers with children on the impact of good nutrition and how eating a more varied diet can vastly improve the health of their children so hope is on the horizon.

This island sits at the southern end of south-east Asia and boasts a dry, tropical climate. With an abundance of coconut palms and eucalyptus trees agriculture is the main occupation. Corn ( maize), rice, cassava, sweet potatoes, dried beans, coconuts and coffee…with crafts and textiles also being important to the economy. How beautiful are those traditionally built houses?

This is the last of my comparisons and this last one didn’t supply  healthy community’s who had their diets spot on and health was at its optimum instead it showed how the advance of tourism has devastated a race and how the effects of  Indonesian occupation; guerrilla warfare by the Timorese against the occupiers has stunted the growth of a young nation…

I sincerely hope that they do not succumb to western influences with regard to their diets and health but hope they build on their agricultural and craft/textile traditions and become a healthy nation of people who deserve their status on the obesity chart proving that cooking from scratch and avoiding highly processed sugary foods and drinks means many acute diseases are totally avoidable…

We are what we eat!

Next week I will be back with recipes and tips to help you with your healthy eating and to show that it doesn’t mean hours in the kitchen especially when you have a family and work… I have 6 children, have always worked and always cooked from scratch…That is without the pets…Horses, dogs, cats, snakes you name it my kids have bought it home.

Healthy Eating…No More Diets…Obesity around the world… The US.

Welcome back to Carol’s Bootcamp…I can’t think why I called it that as this is not about being on a diet but Healthy Eating and I know some people like structure but at some point you will either get fed up with the restrictions of the said diet and then pile the pounds back on or spend the rest of your life eating foods which you don’t really enjoy but they are supposed to be good for you… Well, to hell with all that!

What I have decided to do is some comparisons …It started with a headline about obesity. Country by country and percentages and then I got to thinking about the difference in lifestyles and options or just what we have always eaten..But then those stats began to make sense to me…

Today I am looking at the eating habits of the US who are at numero 19 with a percentage of 33.7%

Yes, I know… I said I was comparing the top and bottom of the table…I got ahead of myself…It is next weeks POST and then back to normal…Sorryeeee

I have family in the US and loved all my holidays I spent there albeit they were a few years ago now and I suspect much has changed…

I still remember the portions though and how a doggy bag was the norm…Something which was foreign to us Brits and I suspect still is to many people.

The breakfast buffets were my favourite but I still have vivid memories of how high some piled their plates and went back numerous times for a refill… How anyone could eat that amount of food is beyond me …A plate piled high actually turns me off eating…

I have also REALISED from comments made in the media, by fellow bloggers who live in the US  about processed foods and I am shocked by how many chemicals and pesticides which are banned in other countries are still being allowed in the food chain…

I have just finished reading barring the charts and links  Food Forensics… A fascinating and scary insight into what goes into food in the US and the consequences to the health of Americans is horrendous… Chemicals which are banned in other countries.

So what do my American cousins eat for breakfast… Cooked tomatoes now as we always asked for ours to be cooked which was a great source of amusement but once tried by my cousins..they much prefer cooked tomatoes with their bacon…

Biscuits( scones), grits, crispy bacon, eggs, sausage, hash browns, cold tomatoes( hot) ham steaks, breakfast meats on the list is endless…cinnamon toast being my favourite…

One-third of the nation is obese and that figure is rising ..recent stats are scary…40% of the population are living with one or more chronic diseases most of which are preventable and 75% of healthcare costs are due to chronic diseases…

My question? why is this not being addressed more robustly …Answers on a postcard as we all know why!

Although exercise is on the increase the obesity rate is still growing and the number one cause of death is Heart Disease…

There is so much engineered hyperpalatable junk food and such aggressive marketing aimed at kids it is no wonder…

I dread to think when I look at The Cook Islands and why they hold the top spot on the obesity chart… what on earth do they eat… I probably could hazard a good guess…

What is the world coming to this little exercise of mine has opened my eyes even wider and I am appalled at the fact that due to greed on the part of governments and manufacturers despite rising national obesity rates and health costs THEY still do nothing …

The mind boggles as to how much their profits, backhanders or under the table dealings raise and swell their coffers that the people they are meant to serve and protect do not get their protection.

We all need to wake up and smell the coffee and HELP ourselves because no other bugger will!

Healthy Eating…No More Diets…Obesity around the world… Australia!

Welcome back to Carol’s Bootcamp…I can’t think why I called it that as this is not about being on a diet but Healthy Eating and I know some people like structure but at some point you will either get fed up with the restrictions of the said diet and then pile the pounds back on or spend the rest of your life eating foods which you don’t really enjoy but they are supposed to be good for you… Well, to hell with all that!

Life is for living…Food is for enjoying…

So what I have decided to do is some comparisons …It started with a headline about obesity …Country by country and percentages and then I got to thinking about the difference in lifestyles and options or just what we have always eaten..But then those stats began to make sense to me…

Today I am looking at the eating habits of the Aussie’s who are at numero 31 with a percentage of 28.60%.

I absolutely love what I have seen of Australia so far and their cuisine is very heavily influenced by the English and the Irish obviously going back to the days when the English and the Irish first stepped foot on Aussie soil.

Beautiful fresh seafood is one of the foods Australia is famous for, Lamington, Pavlova and Anzac biscuits are very much symbolic of Oz…

Sausage rolls, meat pies, Burgers and huge like the American burgers the difference being Ozzie’s love beetroot in their burgers …In actual fact, I first came across Beetroot chutney which was a request from an Aussie customer when he ordered a burger from our bar…

A new one on me at the time and now a family favourite.

Like the Brits, a cooked breakfast is typical in Oz…

Fried Breakfast

Meat pies are eaten with tomato ketchup or as a pie floater on top of a bowl of pea soup… It is also a long-held tradition with the Aussies that meat pies are eaten on AFL Grand Final Day.

BBQ with the emphasis on plenty of meat is again a way of life…

A diet laden with preservatives, salt, fat is why Cancer has overtaken Cardiovascular disease and is now Australia’s biggest killer which is why the Australian government are pushing a number of initiatives and promoting healthier diets which are lower in salt and fat…

A beautiful country with plenty of natural fruits and sympathetically raised cattle the Australians should be much healthier but as with anything if your intake is higher than your output the result will be preventable diseases and higher mortality rates.

It seems such a shame but the whole western world needs to be getting a handle on their nations eating habits or preventable diseases will just escalate.

Next weeks post is the last in this series which I do hope you have enjoyed when I will be comparing the top and the bottom of this table …I haven’t done any research on either yet so I wonder what the difference is apart from the obvious.

As you know I don’t advocate diets as in cutting out food groups but feel that you should eat a varied diet with some foods being eaten in moderation or as an occasional treat. My fellow blogger Sally has written an excellent post on how to lose pounds without resorting to harmful crash diets.

Welcome back to Carol’s Bootcamp…I can’t think why I called it that as this is not about being on a diet but Healthy Eating and I know some people like structure but at some point you will either get fed up with the restrictions of the said diet and then pile the pounds back on or spend the rest of your life eating foods which you don’t really enjoy but they are supposed to be good for you… Well, to hell with all that!

So what I have decided to do is some comparisons …It started with a headline about obesity …Country by country and percentages and then I got to thinking about the difference in lifestyles and options or just what we have always eaten..But then those stats began to make sense to me…

Today I am looking at the eating habits of the English who are at numero 33 with a percentage of 28.10%.

I am sure now that you are all thinking that this is an easy one for me…Well, yes and no…I haven’t been back to the UK for a number of years but I have family and friends there and we do talk food…Surprise, Surprise…lol

Traditionally and very well-known is the Full English Breakfast  which consists of Bacon, Eggs, Sausage, Baked beans, mushrooms, fried bread and maybe even black pudding but as everyone is very busy working a breakfast such as this is now eaten just on weekends or holidays times and replaced by a fruit shake, tea and toast or grabbing a McDonald’s brekky to eat on the way to work during the week…Food on the go seems to be the norm for many people.

In the cold weather, of course, it is a lovely bowl of porridge …. which keeps you going for much longer and avoids the need to snack.

Snacking… the British love their snacks…Midmorning, midafternoon or suppertime so many meal times. The snack food industry has increased at an alarming rate but so have waistlines and diseases which could be avoidable if less snacking between meals was the norm and more exercise …

 

Fridays always used to be Fish but now that has been replaced by kebabs, pizza, Chinese, Indian so many takeaways and restaurants which serve food from around the world. Britain as are many western countries are a nation of snacking and takeaways…

Although the sales of white bread have dropped by 75% and brown bread and wholemeal sales are up 85%…Brits love a sandwich.

Britain’s eating habits have changed over recent years and they eat less fat and more fibre.., low-fat foods are being purchased by many instead and of course we know low-fat doesn’t mean low sugar.

Because of the working life of many Brits, many children didn’t learn how to cook which seems to be a major problem because that means unhealthy microwave meals and the like…

On the positive side in recent times many gyms and free exercise groups have sprung up and parks have regular fun runs so that is all positive …More people are walking or cycling to work which is obviously much better.

Cooking from scratch also seems to be on the increase with quite young children wanting to cook which I find refreshing…

Many more people grow their own foods either in their gardens or on allotments or communal allotments are springing up on rooftops and in towns and cities which are positive moves for health and well being.

I do believe there is so much more to be done and kids need to be educated regarding food … I admire the French and their eating habits they seem to have got much correct and they are one of the nations who don’t snack and enjoy meal times with family and have a good work-life balance.

I think there are many positives but too much emphasis on fast food and snacks although many chefs are working to get the message out there which is good …I think the UK has had and still has in many people’s eyes a bad reputation for food but we have some of the best chefs and young chefs whose restaurants stand a very respectable 7th in the World with their tally of Michelin stars this is some feat and shows that the interest in food and health is on the increase.

I just hope that happens sooner rather than later as we have lots of farmers markets which sell wonderful fresh produce it is just making it accessible to the many rather than the few… Making mealtimes family time and celebrate real food, not crap and snacks.

Up the tax on unhealthy food and lower it on healthy food… Would be a good start and make schools toe the line and serve good healthy food  I know many do but many don’t as Jamie Oliver pointed out not so long ago…Bring exercise back into schools every day…

Well, I feel I can have a little rant even though I don’t live there any more…

I do hope you are enjoying my travels around some of the world’s countries eating habits…

On another note, I have bought my first ever pack of tofu… although the reception from the menfolk in this house is not promising I am going to give it a try and I am also hoping Dolly will soon be enlightening you on the benefits of maybe replacing a meal or two with tofu…

Talking about watching who watched the Royal wedding? Ahhhh I loved it…The bride was beautiful and the service so refreshing and she who shall be nameless scowled her way through it…Hubby looked handsome though as usual…Just saying…

I loved the dress and I do wish people would leave the girl alone her hair looked lovely and if a few strands escaped so what! There have been some nasty comments about that in the media and on some FB Groups and all from people whose pictures did them no favours at all… Why can’t people just be nice???…
