Healthy Eating …No more Diets…

Good morning from sunny Thailand although there could be a black cloud on the horizon when I jump on the scales today…Maybe if I just gently step on they will be kind…

Wow, but that was the few days that was in Phuket and I was true to my word I did not write a thing in my food diary…And did I enjoy my food??? Oh Yes…

So take a pew and I will tell all…

It started with two flight delays and no I didn’t partake no alcohol just H2O( water) …I have an unwritten rule that I don’t drink when flying…It doesn’t help with the jet lag or the swollen ankles so over the years I have learnt…and of course I make up for it when I land so this lady doesn ‘t miss out…

On arrival ..late and my friend had eaten…so I opted for my favourite Grapow Moo washed down with 2 glasses of wine…

After a catch up we eventually went to sleep …

Woken by the sounds of cups clinking…we had a cuppa( tea) on the balcony then showered and took a walk…Oh… it hasn’t changed all the ticket touts selling their wares but we wanted breakfast so we opted for a buffet breakfast at the nearest beach hotel… It was …not a joy really…aimed at the tourist market…nothing to write home about …

So I opted for a Thai omelette which is an omelette with fish sauce and chillies and she added cheese before I could stop her..but it was ok…

 

Time for a walk we strolled along the beach and then we decided to take a walk to meet our other friend…At this point I will just say I love my friend Barbara aka Sofia..her sense of direction…She hasn’t a clue…

A nice walk though and I chatted to a few people along the way…It  was thirsty work walking  so first drink of the day was a lovely mango smoothie…and  Sofia had a banana and pandan smoothie..

Refreshed… we set off…heading for Mini Golf which was our first watering hole… a ginger and lemongrass mojito minus the rum..a mocktail they call it…

Lovely chicken satay to eat… I just love the Thai peanut dip and a lovely cucumber and chilli one …

Lola, Roxy and Sofia are now in the house!

Just in case you were wondering and I think it must be an American thing…For a while when we had our restaurant I heard the staff talking about Sofia and in the end said no her name is Barbara but apparently not or not when she is out…So we became Sofia, Lola, Roxy and Ethel… Who unforunately couldn’t join us…In case you are wondering I am Roxy…

Next stop...A reunion with our Thai friend Iddy who happens to work @ A wine bar…We had to drop by and say hello…

The sun dried tomatoes from Italy were awesome as were the olives …Two bottles of wine later we headed for Ann’s Kitchen where I had the best Penang Red Curry I have had for a while it was lovely…

Next stop …This little bar we know…. a few G & T’s later and after some great music and a little boogie we retired to bed…

I think by now you understand why I am not keeping a food diary… Well I am sort of though but in my head…

Up bright and early it was a banana for starters…Sofia had the muffins…I needed to top up my potassium…I just knew it was going to be one of those days…

Patong here we come…I love that drive the scenery is awesome…

First stop ..well we all had a couple of little stops to make so the Irish Times was our meeting point…It was now 11am but I am sure it was 5pm somewhere in the world so those couple of  glasses of wine were welcome as we chatted and caught up…

On to Absolute for lunch and I had a lovely Massaman Curry very nice and my drink as I knew the next stop was Ship wreck ( our favourite) bar in Patong…

I had a Komucha…I am not snitching here but my two friends …Sophia and Lola ..they were on the hard stuff…Me? I  paced myself…

Ship wreck and I could have been wrecked and quite early in the day…so I was again on the water…

Time for a sundowner and nowhere better than one of my favourite Beach side restaurants …The wine flowed as did the prawns, garlic and some lovely very thin sort of bread with goats cheese and things…

Time for a tune or two accompanied by some G & T’s…

And now to sleep….

Breakfast at Waya’s was fruit and lovely cinnamon bread and fresh coconut water….

A last stop at the wine bar and we headed for the airport…..

1lb on…That is a minor miracle….So I am happy with that and back on the food diary

When I say no to diets I mean sensible healthy eating BUT sometimes to take time out and enjoy is ok..So no beating yourself up I don’t..Just get back on it … 1 lb on considering what I ate and drank is really good…But we did some walking and I gave myself a little break at some watering holes and stayed on the H2o aka water…You must keep hydrated in the sun and it worked …I enjoyed some great food( guilt free) and cocktails and a few bottles of wine but ..Back on it now as Christmas is coming and the only thing getting fat will be the goose…WON’T IT?????

How do you cope with a holiday and breaks??? Any tips to share???

Healthy Eating…No more Diets…

No more...Diets Healthy eating (6)

Welcome to Carol’s boot camp…We are experiencing some torrential rain but the food diary has been religiously filled in… I have left nothing out… Honest! I will tell you now though from tomorrow the diary will not be filled in as I am going to Phuket for a few days to meet up with some girlfriends for some girlie time and who wants to keep a food diary…Not me!

I know what I should be eating and I also ( as I lived) there for 5 years know what I will be eating…My 2 measured sundowners will probably  Lol… There will be more I cannot be the only one partaking in a Mojito or three…I won’t lie I am going to have fun…

Diary begone for the 5 days we will resume in earnest from Saturday and as I will say it very quietly Christmas is coming and soon it will be upon us and we want to look and feel comfy in that Christmas outfit, don’t we?

I will, however, add the links to the list and the shopping list which I have found both really handy…I found this really handy and I haven’t had a biscuit for weeks…And as little Lils came at the weekend and also I thought I wasn’t being nice depriving hubby I bought a packet and no I haven’t…and I have to admit I was prompted by this post from Sally over @ Smorgasbord health and the little chart and great advice she produced …It is so handy and easy to work out anything which you eat and isn’t on the list.

I do think it was discovering just how much difference 2 digestives made in a day…It scared the bejesus out of me.

Those 2 digestive biscuits I was having with my early morning cuppa equated to 150 calories so in 1 week 1,050 calories in 1 year 54,600 calories which equals 16 lbs of fat and a 7.3-kilo weight increase…Over 5 years that could be a whole small person…

But I will get straight back on my healthy eating from Saturday and if I stay the same it will be a minor miracle but I am now 9 lbs lighter having dropped another pound this week so staying the same will be fine… and if I put on an lb or 2 then that also be fine I will just have to walk more next week.

So how have you guys done any tales of success to share???? We love a good success story, don’t we ??

So food wise my week has been good..as my son is now back in the Uk for a while my shopping has lasted a tad longer…We know who eats all the food…lol

Tonight as I am going to Phuket tomorrow I am having Pork and Thai Basil…I have stocked up and made a casserole for the hubby and the grandson and got some steak in so they are sorted…Aston actually cooks all my meat and he cooks a mean steak…I think all of the male species should be able to cook and shop ..Don’t you???

This dish is one I really like and I eat quite a lot it is quick and easy to make and can be made with sliced pork loin as pictured or with mince and the recipe is an authentic Thai one…

Pork and Thai Basil.

Ingredients:

For 1 serving.

100 gm pork loin sliced finely

2/3 birds eye chillies. cut in small slices.

2/3 cloves garlic finely sliced.

2 long beans( snake beans) chopped in small pieces.

2 stems Thai Holy Basil.

1 tbsp Oyster Sauce.

Shake or 2 of Maggi ( seasoning sauce)

1/2 tsp black soy.

Let’s Cook!

Put tiny bit oil in small frying pan.

Add Oyster Sauce, Maggi and Black Soy stir to combine.

Add chillies and garlic and cook for  1 minute then add your finely sliced pork loin-stirring until cooked about 2- 3 mins. Add Green Beans and Thai Holy Basil cook for further 2 mins.

In the picture, I have served it with cauliflower rice but I also serve with steamed rice it really depends just how I feel… Cauliflower rice is gluten-free and has fewer calories and isn’t a carbohydrate. It is also surprisingly very nice …

You can also serve the pork with an egg which is how the Thais often eat it..If you don’t want to fry an egg then a nice poached egg would be just as nice…

Healthy Eating…No more Diets

Welcome to Carol’s bootcamp…

I am back and madly scheduling posts so that I don’t get put in the same position as I have been for the past few weeks having to do what I can on my phone and iPad…Not ideal I love my laptop which is now much better .

Healthy Eating...I was doing so well wasn’t I? but I admit the frustrations of the last few weeks did reflect in my diet although I will say keeping my food diary  did help… I stayed the same last week which in itself was a minor miracle given that I snacked somewhat…

Hands up! I did ! Snack that is…. But it was yummy x

However because I was so stressed and had to go back to the laptop hospital on more than one occasion and as I take buses and walk…The location does not have a direct bus link  the weather was also not kind …Tropical storms… If I didn’t know better I would have thought the whole world was against me but I am made of sterner stuff than that… British backbone came into play…

Although I still snacked  I had Sally’s list and the food diary to keep what I was doing in prospective… in other words it could have been worse…

The upside was I walked more… on a couple of days I walked 2 miles or 3.3km whatever way you measure it so over the week I clocked a few more miles ..It is amazing what frustration does to me…I walk it out of my system so whatever works for you..utilise it!

Hence probably why I stayed the same…THE BONUS ..This week I lost 2 lb ..Was it because I was much better and got straight back on to my normal eating plan or was it also a combo of the increase in my exercise?? A bit of both methinks..

So in my book my disaster was also a triumph.

My week has been good I got lots of fresh vegetables from one of my local markets, some picked crab…I do hate picking  crab  myself so fiddly… Some lovely fish , fresh coconut as both hubby and grandson love a piece of fresh coconut to munch on, Some lovely fish cooked in a banana leaf with lemongrass and chilli which was our snack when we got home ….

Today on my daily walk I picked up some lovely fresh green tea leaves as I do like a cup of green tea now I know how to brew it properly I don’t like bitter tea there is nothing worse than bitter green tea is there ? Although I also like Matcha which is more mellow in taste…If you don’t how to brew a nice cup of green tea I have added a link for you.

This week I will now be swapping my early morning ginger, ACV and honey for green tea I like to vary my early morning drinks …

I also picked up some lovely fresh Longan honey which I hadn’t tried before but my friend Mr Google told me it was very good and healthy so I was pleased…. I mostly use honey if I need to sweeten anything…like natural yoghurt which brings me nicely to the little bit of research I did on yoghurt while my laptop was sick …also because I had noticed a lot of Greek style yoghurt on the shelves where I buy my yoghurt and wondered what the difference was…It is interesting and yoghurt as I found out is not as healthy as they are advertised to be…So if you missed it then the link is here for you it makes interesting reading especially if you or your family eat a lot of yogurt.

Good morning/afternoon and welcome…This week it is a post from my archives …I am on week 3 of my food diary and it is helping but this weeks has a few extra additions I have been stressed and all the rest and struggling with the smallness of the iPad and its quirks…So no loss this week stayed the same which is a minor miracle in itself…lol.. No more...Diets Healthy eating (4)

Welcome back to Carol’ s Tuesday Healthy eating last week it was 4 lbs aka No biscuits and still no biscuits and no Haribos…. This week it is 1 lb but happy with that   One pound it is fair as I think 5lbs in 2 weeks is good and with little effort……..I also had added temptation this weeks as little Lily came to stay and she loves her morning cuppa with a biscuit so I am pleased as I had a large packet of digestives saying eat me!

Also as she lives in very rural Thailand she doesn’t live near shops so going to 7/11 is a treat for her….But everyone knows do not get Nannie any and that is better to let everyone know which makes it harder to cheat….

I have also stepped up my walking every little helps as the saying goes….

SO what do I eat and drink here is my typical day………

Between 8 and 9 am I have my morning cup of tea the only hot drink I have in a day

10 ish I have glass of fresh coconut water straight from the drupe…

Between 11 and 12 I have my first meal which generally is either Grapow Moo, Horapa Moo, Som Tam or noodle soup. ( I) will explain what they are below.

Between 12 and 5 I drink water.

5 ish I am now feeling picky so I have either some pickles and an inch sq of feta cheese….. 2 measured sundowners.

Between 6 and 7.30 we have our evening meal just tonight it is Thai green curry.

Any drink with dinner or after is water and I don’t eat anything else( This ) is when I had got into the habit of having haribos or a magnum if the grand kiddies went down 7/11….

It is so easy for those little things to just creep up on you and the pounds creep on….I don’t eat big meals it was the in between for me.

That is why I say to you if you cut out the snacking you can eat good healthy food whatever you want guilt free at mealtimes …. I am having a Thai green curry tonight the same as everyone else….. When I make an Indian curry I have a spoonful of mango chutney I also have a piece of flatbread  not a whole one as that is too much for me but my point is I eat the curry and any accompiaments and enjoy it.

Yes we make tomato based curries rather than too creamy but sometimes we do add a bit more yoghurt but it is because of personal taste.

I always cook from scratch using fresh ingredients and we don’t make sauces loaded with cheese and cream very often…I love mac and cheese but truly maybe have once or twice a year and I know that sounds a long time it just something I don’t make that often but when I do we enjoy it we just have other foods which we enjoy on a regular basis..6..It is all about choices and what we eat is our personal choice BUT if that personal choice is detrimental to our health then come on…..

Who do we cheat? We cheat ourselves and only ourselves…

Here are the recipes for my first meal of the day….

Chicken/Pork and Basil ( horapa)

Ingredients: Serves 1

100 gm Chicken or Pork mince or you can use loin and slice finely.

2 Long snake beans

3 cloves garlic

3/ 4 Thai chillies

Big handful of Thai basil pick leaves from stem

1 tbsp Oyster sauce

1/2 tsp Dark soy sauce

A shake or 2 of Maggie seasoning sauce

Lets Cook!

Wash and cut snake beans in half inch pieces

Peel garlic and chop chillies then grind in pestle and mortar

Heat a very small amount of coconut oil in a pan and add chillies and garlic cook while stirring for 30 seconds and add meat cook stirring until mince or meat has browned, add sauces and a little drop of water.

Add beans and  cook for 1-2 minutes add basil and cook for another minute.

You are now ready to serve with rice …I use black rice if I have it or organic white rice I eat about 2 tbsps cooked rice and a couple of spoonfuls of the pork or chicken this recipe serves 2/3 depending on size of portion. If I am cutting carbs down I would make cauliflower rice which I really like.

I’m am writing this on my iPad as my laptop is sick and I was going to show you noodle soup but the pictures are son a USB stick which doesn’t attach to the iPad so that will be for next time hoping I have a laptop…  I am finding the iPad somewhat restricting….

Healthy Eating…No more diets…Eat yourself slim…

Welcome back … Before I say anything else I have kept a food diary this week incentivized by Sally’s little chart…I have had NO biscuits with my early morning cuppa and this is Day 9 PLUS I haven’t had any Haribos for 9 days either…

The result?? I have lost 4 lbs this week and that is eating normally and just cutting out those two pictured above… Have I missed them…

No, actually because I replaced them for 3 days with a custard Apple rather than making ice cream with them which was my original plan I decided to eat the fruit as it was and it was really nice…

I will say I don’t eat anything I don’t like and if I am cutting down on something or cutting it out I do not replace it with anything like tasteless rice cakes or anything else which tastes like cardboard because THEY promote how good they are to help you lose weight…

I replace it with something else which is better and healthier but which I enjoy eating…

My second treat instead of haribos was 4 small ( just one bite) sized sun-dried tomatoes which I love and an inch square of feta cheese which I love with tomatoes.

Feta cheese seems to be a healthier choice. One ounce (28 grams) provides:

  • Calories: 74
  • Fat: 6 grams
  • Protein: 4 grams
  • Carbs: 1.1 grams
  • Riboflavin: 14% of the RDI
  • Calcium: 14% of the RDI
  • Sodium: 13% of the RDI
  • Phosphorus: 9% of the RDI
  • Vitamin B12: 8% of the RDI
  • Selenium: 6% of the RDI
  • Vitamin B6: 6% of the RDI
  • Zinc: 5% of the RDI

It also has decent amounts of vitamins A and K, folate, pantothenic acid, iron and magnesium.

What’s more, feta is lower in fat and calories than aged cheeses like cheddar or parmesan.

One ounce (28 grams) of cheddar or parmesan contains more than 110 calories and 7 grams of fat, while 1 ounce of feta has only 74 calories and 6 grams of fat.

So the little square of feta I enjoy is doing me no harm and better for me than cheddar.

I still had my sundowner every night and lost 4 lbs... To me I didn’t go hungry I ate what I fancied just cut out those 2 biscuits a day and haribos and I am not talking a big bag as they do child sized little bags here with about 10 little teddies per bag but it is still processed and added sugar and colourings…

I also printed off Sally’s food shopping list and worked through it vitamin by vitamin and chose the foods which provided that vitamin or protection and made my own list of what I should be buying.

Then I drilled it down that out of the 40 items I took from Sally’s shopping list I always bought 22 of those items, next I looked at what I do buy but less often and that equated to 13 items which either I could only buy when they were in season or foods which I just don’t eat as often not because I don’t like them just because they are not always available or I prefer something else. The remainder I either cannot get here or are very expensive to buy as imported goods.

But overall I think I eat a pretty varied diet I just need to exercise a little more… I have ordered my pedometer and am waiting for it to arrive and I also need to keep an eye on those processed foods a little more rigorously…

The bottom line for me…

No-diets-No-excuses

Retired No One Told Me!..Weekly Roundup… It’s all about the Flavour…

Welcome to my weekly roundup …you know the procedure by now..comfy chair, a drink relax and enjoy!

My first post week was one which bought back memories of a lovely holiday in Malta and their lovely National dish of rabbit stew which in turn made me remember my granddad and my uncle Ken…Both of who worked on the land and taught me much when growing up…The rabbits were mostly poached(shhh) and his ferret definitely not a pet but that is life and how it is…The rabbit stew, however, my mum and Nan used to make..I loved it!

Enjoy recipes and I think I will be making my first octopus dish as Jovina’s recipe sounds and looks glorious…

Then it was my regular Tuesday No more Diets …Healthy Eating… I started keeping a food diary as I had decided no more biscuits with my morning cuppa…Day 6 and No biscuits I sent Lily home with the biscuits so as to avoid temptation…How did all this come about? I read the lovely Sally’s post and perused the chart she provided and was shocked that those two biscuits could have such an impact so I duly weighed myself and started my food diary…

The plan??? Keep the diary and weigh myself every Monday( no hopping on and off the scales)…Well…Today is Sunday and the lure of the scales just too much…4LBS… OFF!

I will also be truthful and did dump the Haribos only little packets of jellies but nearly every night… 2 things and 4 LB in 6 days…

Healthier, it saves me money…A no-brainer really and it takes less time to make them than it takes to get in the car, negotiate the traffic, find a car parking space and then queue at the till and you still have to drive home…

Following on from Fruity Friday and the red Bananas I discovered along with some things I didn’t know …That all red bananas are not naturally red…The ones on the bunch are but not the pretty looking red bananas in a dessert…They are red because they are cooked in Lime water?? A trip to the local market with my daughter in law and we found the red paste…Spoiler Alert!

Lastly, I took you on a journey through the 5 tastes of  Thai cuisine the ingredients which make up those tastes of Spicy, Sour, Sweet, Salty and Bitter…

How you don’t get a starter, main course and then a dessert here… Even in a restaurant that serves western food Thais don’t get the concept of individual courses as their food is about the whole meal and how the flavours compliment each other how if you have a hot curry you will get a mild but tasty soup and stir-fry…

Which is why a Thai recipe is a guide as chillies vary in heat, fish sauce can vary by brand, depending on the time of year the taste of limes vary which takes me back to what I always say to you TASTE and TASTE again build your flavours to suit your palate and then you may be able to say I can cook Thai Food …

It has taken me 10 years and I am still learning…
