Healthy Eating…How to lose weight and eat the foods you love…

This week as I know so many of my readers live in colder climes I will give you the recipes for some delicious soups..all healthy, made from scratch and good for you…

This is one of my favourite Thai soups and the first time I have made it. It also brings back memories of a certain lady…Keeleigh who when she visited us could not get enough of this fabulous soup.

You may also notice that it isn’t the bright orange colour of many Tom Yum soups you see or may have had it is because a mix is used and it has colouring in it …If it is this colour it is made from scratch from fresh ingredients no preservatives and colourings.

Ingredients:

  • 2 litres of water
  • 4 stalks of lemongrass
  • 1-inch chunk of galangal
  • 10 kaffir lime leaves
  • 10 Thai chillies
  • 5 cloves of garlic
  • 500 gm Prawns
  • 300 grams of oyster mushrooms
  • 2 medium tomatoes cut into quarters.
  • 2 white onions (medium-sized) cut into large chunks.
  • 1 and a half teaspoons of sugar
  • 7 – 10 tablespoons of fish sauce (depending on your taste)
  • Juice of 5 -8 limes.
  • A handful of cilantro.

N.B Next time I will use shallots instead of white onions and I recommend using the lowest amount of limes and fish sauce and Taste! Adjust if necessary as everyone’s taste varies.

Let’s Cook!

The first thing to do is put about 2 litres of water in a large pot to boil.

Then I like to start by squeezing my limes. This is not the first step of the recipe, but it’s best to have your limes squeezed so when you need them later, you don’t need to rush to squeeze them all.

Take your stalks of lemongrass, and first tear off the outermost leaf and throw it out. Then, I like to use a rolling-pin or the handle end of a knife to lightly pound the lemongrass to release the flavours. Then just slice it diagonally into 1-inch strips or so.

Take about 1 thumb-sized chunk of the root part of galangal, and chop it into slices.

Coarsely break about 10 kaffir lime leaves – no need to cut them, just tear them – which is going to help release their flavour.

Peel about 5 cloves of garlic.

I used about 10 Thai bird chillies for this recipe, but you can use however many you’d like. First, take off the stem, and then you can either just slice them in two pieces, or give them a little pound on your cutting board like I did (just be careful of flying seeds). You can also remove the seeds if you’d still like the chilli flavour but not as much heat.

Throw the lemon grass, galangal, kaffir lime leaves, garlic and chillies into the water.

You can put the lid on just so it starts to boil which releases the herb flavours quicker.

Now prepare your prawns I remove everything except for the tail…..others put in whole prawns…personal preference.

Boil your soup with all the herbs in it for about 10 minutes.

Then add your mushrooms, which you should pre-rinse beforehand.

Cook for 4-5 minutes.

Add tomatoes and onions.

 

Cook for further  6-8 minutes.

Now add prepared prawns and cook for 2-3 mins( if overcooked the prawns will sink to the bottom of the pan. If you get any scum on the surface of soup it’s from the prawns then just skim it off the surface.

Remove from heat and stir in fish sauce, lime juice, sugar and cilantro.

Taste and adjust if necessary.

This delicious soup is now ready to serve.

 

I hope you enjoy this soup as much as we do and remember to add the smallest amount of fish sauce and lime juice and taste and build on it, taste and build until you get the right level of salty and sour for you 🙂

Thai Rice Soup.

This soup is eaten for breakfast, it is given to babies, anyone who is maybe a little unwell or just because they want a comfort food. If you use cooked rice then it will be more like a porridge and how it would be given to babies and also with less seasoning for babies.

If you want a bit more of a substantial soup then add a few prawns and if you are vegetarian just omit the meat and maybe add some pak choi or white cabbage shredded., some tomato…Play with the flavours.

Ingredients:

1/4 cup minced chicken or pork

3 cloves of minced garlic

1 and a half tbsp oil

1/2 tsp salt

2 tsp soy sauce

1 and 1/2 cup of fresh chicken broth

1 cup of steamed rice

1 egg

1 tbsp finely Julienned fresh ginger

1 spring onion finely sliced

1 tbsp coriander chopped

Pinch of white pepper.

Let’s cook!

Heat the oil and add the minced ginger and cook until ginger is golden remove half and set to one side for garnish.

Add the chicken or pork and season with salt and the soy sauce then pour in your chicken broth and the rice. Cook for 3-5 minutes depending on whether you want a soup or more of a porridge.

Turn up the heat and crack the egg in the middle of the rice either sir to combine through the rice or let the egg poach.

Pour into your bowl and top with the garlic, spring onions and ginger sprinkle with a dash of white pepper.

Enjoy!

Two lovely soups ..No calorie counting…I don’t do that… we all have a good idea of what our food contains and whether or not we could eat bowls of it or not…Don’t we???

I eat fairly small portions but if I am still hungry I would have a little more obviously with these soups you don’t eat bread…

I generally never ever feel bloated I eat enough..enough to satisfy my appetite…I don’t count calories..I am old enough to know what is calorie laden and I am not on a diet… It is a lifestyle for me and easy to maintain because …I had my pancakes ..did I not on Shrove Tuesday… I enjoyed them…

That was my treat and no guilt…BUT… I was extra careful the next day and also walked a few extra km.

What I am really saying is MODERATION AND COMMON SENSE…Cheat every day…Who is the loser…It isn’t me…

I do hope this is helping you along with your feeling healthier and eating healthier path… If you have any questions or foods you love and need recipes for ..Ask me…I don’t bite and enjoy my food and my sundowners… But also lose weight or maintain it as now I seem to lose in little bursts…If I feel it needs a kick-start then I up my walking or cut my snacks not that I eat many anyway or will have a soup day.

This should be fun…I love my food…I love living…I have much I want to do… I don’t want to be sick with anything that I have control over…Notice I said I..moi..me..myself…

What have I been drinking this week?... My first drink of the day…A small glass of hot water, with a tbsp of apple cider vinegar, 2 tsp raw honey and about a tsp of freshly grated ginger…

I do alternate my drinks every so often but I also think this has helped curb my sweet tooth…Oh yes…This girl used to love her cakes and sweets…I still do but I don’t crave them anymore and if I do see something and think I fancy that then I may buy it but can just have a piece or one sweet and really enjoy it…but truly I couldn’t eat the whole packet like I used too… Is it my age? Has cutting out sweet, sugary drinks and caffeine curbed my sweet tooth???

It’s Pancake day today! Shrove Tuesday and tomorrow is the start of Lent.

I am having a pancake…complete with Lime and sugar( i Can’t) get lemons… I am going to enjoy it! I am not going to feel guilty and neither should you…

We cannot go through life avoiding all these days of the year which tempt us with …yes unhealthy goodies…Can we???

MODERATION…Simples!

My snacks.

Honestly, I don’t snack a lot but when I do… I have a fridge full of pickles, Pickled Jalapenos and I eat a small piece of feta cheese and a couple of cherry tomatoes.

Pickled cabbage ( Pak dong), Pickled onions, pickled cucumber and Pickled Garlic…occassionally I pickle watermelon rinds and pickled eggs. All little nibbles to enjoy!

I might make a small bowl of fresh salsa or guacamole( occasionally) and here is where the moderation kicks in IF I eat Doritos ( moderation)

But make your own healthy chips for dips…

Salt and Vinegar Kale chips.

Just tear leaves from a bunch of kale then toss in 2 tbsp of Olive oil, I tbsp of Apple cider vinegar, 1 tsp of sea salt and 1 tsp of maple syrup.

Spread on a baking tray and bake at 180 for about 10 minutes turning after 5 mins and bake until crisp and dry. Cool down and enjoy either on their own or with some fresh salsa…

Vary kale chips by adding some garlic…Play with your flavours get the kids to help…

Beetroot and rosemary chips

Peel a medium beetroot and thinly slice with a mandolin if you have one or use a vegetable peeler. Arrange on a baking tray and sprinkle with a little Olive oil. Bake 180 degrees for about 20 minutes until the edges dry out. Sprinkle with a tsp of chopped rosemary and bake for a further 10 minutes. Cool on a wire rack they will crisp as they cool down.

You can also make healthy chips from apple, banana, pineapple, pears and papaya.

Healthy Eating…How to lose weight and eat the foods you love…

Thank you for joining me again this week….Carol’s Bootcamp I should be calling it…Haha…What are you unfollowing me for… but NO!

What I will be doing every Tuesday after I have told you a little..no everything about my lifestyle and eating habits… Is??

Show you what works and diets don’t!

I have tried them all…Cabbage soup, no carbs, no fat, those awful meal replacement drinks, various fat burning tablets( haha) sucker…as they laugh all way to their bank at my expense…Yes, some worked…a little, not so much or I felt ill, got headaches… You name it I have probably tried it!

When I retired I thought …yes can’t you hear cogs whirring… I am going to change, I found blogging and writing, had time to cook more, experiment…I have so much more I want to do…

So if you want to join me …It is free…I don’t want to know how much you weigh, I will not be checking up on you… We are all adults…grown up even…

All I ask is honesty..you cheat..you cheat yourself, your health not mine… YOURS!

Let’s Do This!

First and foremost…What do I drink…I looked at what I was drinking and no wonder it piled on the pounds…Diet Pepsi…Sugar…Any bottled drinks which promote AND SCREAM good for you and healthy…Read the labels…They lie! The SMALL print which even with a magnifying glass I can’t read…I don’t have time to read it…Do You? So if it has more than 1 ingredient I don’t buy it!

Because if it is 100% whatever they are selling what else do you need in your drink??

So what do I drink?

First thing in the morning...before anything…

A small glass of hot water with a tbsp of Apple cider vinegar and a spoonful of honey I also sometimes grate in some fresh ginger.

During the day…

Fresh coconut juice ..and yes I am lucky I have it here they grow on trees here…I buy mine from a little man down the road who cuts the coconut and pours out the juice scoops out the soft flesh and puts that in my juice.

Sometimes I make a fruit and vegetable smoothie. For me, this normally replaces my lunch and contains whatever fruit and or vegetables I have Beetroot, tomato, carrot all go lovely with fruits…

I also drink Kombucha which I love… again just watch the labels if you BUY kombucha I will give you the recipe to make your own in another post.

But what is Kombucha? It is a fizzy tea, usually made with black or green tea, sugar, bacteria, and yeast… called a scoby… It has a slightly sour, almost vinegar-like taste which suits me as I prefer sour to sweet.

Also, drink lots of water…

I have one cup of tea a day made by my son or hubby..that is my only hot beverage. English Tea, a dash of milk, no sugar. Occasionally I vary that with Green tea, redbush tea or Matcha…

So for me a variety of drinks but all drinks I love and which are healthy… No added sugars or preservatives…

What I am asking you to do is look at what you drink… does it contain lots of milk and sugar?? Do you drink them in moderation or 8 a day????

Moderation is my word for this new way of eating…I eat what I fancy… but sense comes into THE EQUATION ..because if I ate chocolate all day then that is crazy and would not do my health any good…SO MODERATION.

You choose what you drink for good health… Can you make it more healthy? Have you tried other drinks? You may like them… I hated green tea until I learnt how to make it properly, The apple cider vinegar makes me shudder it is sharp but I am used to it now but the health benefits are immense.

Change is not easy and I won’t lie you have to want to do it..but YOU CAN Do IT!… I want to be healthier and maybe stave off some of the inevitable illnesses that advancing years bring… I am no spring chicken… By trying my best to eat what I like and as healthy as possible.

In 3 years I have lost 5 stone which is approx 31 kilos…my weight is stable and it drops a few more pounds every so often. How I eat works for me and it should work for you…

I eat what I like but moderation…For exercise I walk daily or 6 out of 7 days…I have never liked jumping about to music… But this is about YOU finding what you enjoy…

Following an 80% 20% rule works for me over time my taste buds have changed and I don’t crave the things I used to…I can open a box of my favourite Turkish delight and eat 1 piece a day…

Most evenings is time for a sundowner …  my white wine I add soda to thus reducing the calories and my G & T  which I have occasionally that is part of my 20%.

Generally, I only eat 2 meals a day..but that is me if you work or do lots of exercises you will need more and if it is cold we eat more don’t we?…Fuel…But choose wisely…find what you like and… Let’s get healthy …

Next week I will give you some recipes ..food I eat…Food I enjoy as I believe you should love what you eat which is why these faddy diets don’t work…If we feel deprived we eat it anyway…Time for change are you ready???
