Smorgasbord Blog Magazine – Carol Taylor’s Food Column – Lemon Grass Chicken and Jamaican Chicken Wings

Time for my cookery column once again…Two completely different chicken recipes both delicious and a lovely recipe for Thai peanut sauce…I hope you enjoy!

Smorgasbord - Variety is the spice of life

I just love cooking with citrus fruits not only are they healthy but they add such a lovely zing to a dish don’t you think?

Today my dishes includes either Orange or Lemon and when I was thinking about this and don’t ask why because I haven’t a clue my brain just wanders at times and goes off on a tangent.

But the Children’s Nursery rhyme Oranges and Lemons, said the bells of St.Clements sprung to mind…Who remembers that? We used to play that game at parties and in the school playground…Did you?

Today I give you a recipe which was originally given to me by my friend Mamik who comes from Indonesia… she makes the most awesome Beef Rendang which I will share with you another day…

These chicken skewers are lovely and moist and making them on lemon grass skewers just enhances that lovely lemon flavour.

Retired No One Told me and Orienthailiving weekly roundup…Health, Heaven and Hell!

Welcome to my weekly roundup of posts…First things first though…

Happy International Women’s Day to all you ladies out there…You Rock!

The sculptures are quite graphic in a …and I am searching for the word here…some look a little like paper mache figures and the painting is crude but it gets the message over …Be Good!

It is then over to some unusual recipes… I don’t know how many of you read my post on Jack Fruit over at Sally’s ?… It is classed as the Wonder Tree and was not a fruit I had eaten much of even though I have a tree in my garden which bears copious amounts of these very large fruits every year but I cooked it as I had heard it was popular with many vegans as a substitute for pulled pork …

Moi yes me who questions everything…I must have been a teacher’s nightmare as a kid…Well, it is now being promoted as a very viable alternative which can feed the world. See this article which Sally from Smorgasbord sent me…With the comment ..look what I have started…Who me???

More about exotic fruits here…

Fruity Friday and this week it was the turn of the very vibrant, pretty Dragon Fruit.

Carol cooks! Dragon Fruit

It was then the turn of Sally with more wise words on Hydrogenated Fats…Well worth a read if you missed it and if you didn’t worth another read…I always read articles like this more than once so that I can digest it all…

I then took a little break, not for any particular reason I was just doing maintenance on older posts and checking links etc… Tidying photos up and making sure they had a description much easier to find now.

Tuesday it was Boot camp where I told you a little about what I eat and I also tested a new protein drink …using fresh fruit, coconut water and cashew nuts but using dates for sweetener instead of honey which is my preferred sweetener…It was nice but I prefered the raspberry one I made the week before.

No more diets

I just keep reading about the levels of iron in these protein powders and just know that in a few years time when people start getting sick and it is attributed to protein powders I will be proved right once again. It happens time and time again and to me, it seems the consumer never learns…

Lastly, it is my food column over at Sally’s place. My recipes for Hot Cross buns and fish for Easter which falls on April the Ist this year.

That’s all for my weekly round-up this week… I am now popping over to Sally’s to celebrate International Women’s Day 🙂 xx

Are you coming ????

Smorgasbord Blog Magazine – Carol Taylor’s Food Column – Hot Cross Buns and Fish Balls.

One a penny, two a penny..time to bake Hot Cross Buns…I hope you enjoy the Easter Recipes that I have for you this week 🙂 x

Smorgasbord - Variety is the spice of life

This week Carol Taylor shows us how to prepare Hot Cross Buns and Fish Balls (sorry Carol but I am sure there is a joke in there somewhere).

There have been packets of hot cross buns in our supermarket for the last four weeks, all with long expiry dates (suspicious)… make your own from scratch and enjoy not just the flavour but the knowledge that you getting the real thing.

Carol Taylor’s Food Column – Hot Cross Buns and Fish Balls.

Yes it’s that time of the year nearly Easter although Easter Sunday falls on the 1st of April this year which is also April Fools Day

How many of you remember singing one a penny, two a penny, Hot cross buns or am I showing my age?

It became an English language Nursery Rhyme and a street cry referring to those spicy Easter buns…associated with the end of Lent.

Retired no one told me and Orienthailiving weekly roundup…Recipes, ranting and back door trots…

What a week this has been... Have I got the mother of all roundups for you just in case you missed any of my posts…

I started with my recipe for Asian style ribs... And guess what the first time we made them they were awesome but I was the sous chef on that occasion and not paying too much attention…..I was chopping and julienning the ginger and writing down the recipe while taking photos…One’s son was cooking the said ribs… They were AWESOME THE BEST!

Take 2!

Mum pulled up the recipe and we started preparing the ribs…

There then ensued a conversation as to which soy sauce was used… I had written the recipe down WRONG ….who would think one word would make a difference…Oh, it did! Trust me…. Black Soy…Black Soy Black Soy…I will not be forgetting that!

I have also amended the recipe and apologise to anyone who used just regular soy…

Then it was over to my blog Orienthailiving for a post on the upcoming Songkran Festival…Thai New Year where there are lots of very welcome water throwing which cools you down in this heat…It is a fun-filled few days and this is one of my all-time favourite photos of my grandson enjoying Songkran…complete with a wig, flowery shirt and water pistol.

Healthy eating… How to shift those Christmas kilos…For good!

lady holding veggies

Well, January is nearly over and I think by now most of you will have finished those boxes and tins of chocolates or maybe you have been really good and given them away??

Who am I kidding?? Who does that???

I have put on a few kilos..why?? Well not counting the Christmas excess…That Christmas dinner was awesome…I just love bread sauce and stuffing with cranberry sauce and the Christmas pudding and cream…After eight mints you know the ones with the little hard pieces of crunch in them? Or the peppermint creams…

It knocked me off my little healthy eating path..a few potholes…

Normally I am fine…I walk every day or 6 out of 7 days… Eat generally what I like 80% of the time and occasionally my 20% kicks in when I fancy something a bit naughty but nice…Who doesn’t???

My weight has dropped 5 stone since  I have been living here and my tummy is quite flat…There is not so much temptation here as the food is entirely different and the diets… Lots of fresh produce and eaten raw as well most of the time…so I guess not so much temptation and now I don’t crave sweet things like I did…I can make that box/ packet of goodies last a week or more..happy with 1 piece of chocolate a day instead of the whole box…

Do I love food?…Of course, I do… But I love my health and wellness better…

Do I love spending hours in the kitchen?? In this heat, you must be kidding!

So as I need..No want to kick those few extra kilos into touch I have gone back to watching what I eat just a little closer as generally, I am ok… I have also been researching and trying new recipes which are healthier and tasty and will make your taste buds sing..

So Tuesdays are going to be my healthier eating day when I will bring you some tasty food and of course some chatter those of you who know me … Just know I love a chat! So talk to me, tell me what you want, where you need help and if I can I will…

Just know I am not quiet, shy and retiring…I love to chat and I love finding out about the food I eat and it is harder for me than most of you…I don’t have fancy cooking pots and pans here…I am lucky I have a kitchen most Thai houses don’t!

Just a two ring burner and a BBQ ..most of the time outside and not even a kitchen sink… I am luckier than most here…I have a sink…lol… and a ceramic hob… the oven that is soon to be replaced  is this table top thing and it is ok…but not reliable and I am waiting for a proper oven although it will be bottled gas as there is no mains gas here…

But if you have visited Thailand then you probably have seen the marvellous tasty amazing food which is produced by the side of the road, on a street market stall …Who needs a state of the art kitchen??? Look at that beautiful squid!

I will bring you tasty healthy food which takes longer to cut your veggies than cook..most of the time…

I can hear your thoughts…I bet I can’t get the ingredients you can…Well, not all of the time…But most of the time you can and if not I will suggest a substitute…

It won’t all be delicious Thai food, it may be European, Indian I have some wicked recipes given to me by my Indian friends…It won’t come from a packet it will be cooked from scratch…For those of you who can’t cook or don’t cook it will be easy… I don’t do complicated very often and I don’t do many cakes and puddings…But I will for those of you who like them..only sometimes…haha… as a treat… I can be mean…Who needs a pudding when you have just eaten the most delicious lunch or dinner???

Ok, Ok…I know sometimes you do… I can do snacks like lovely fresh salsa…and yes Doritos or crackers…You have your 20% … Don’t you???

Use it wisely…

I want you to love your food and lose weight…But we all know that it is not always easy for some and some go into it half-heartedly but I want to live as long as I can…by watching what I eat…I am not fanatical…I eat proper food… I just like to know what is in my food… I don’t do gyms for exercise I walk..but if a gym is what you like and enjoy then go for it…That is half the battle won…

If we love our chosen exercise and food we do it and eat it!  stay healthy and lose weight… No fads..No get slim quick..no fancy foods…No going without…Think moderation… No right way or wrong way ..Just your way!

It has worked for me but I am a single-minded cussed old cow sometimes who loves a bit of Christmas pudding and cream…I don’t follow a rigid diet or exercise plan… I enjoy my life and want it to continue as disease free for as long as I can…It works for me…Will it work you?? Only you can answer that…

Moderation is all I ask and honesty be honest..don’t feel guilty about what you eat..Enjoy it! Love it!….We are all grown ups and we know what is good for us and what is not…

If that television advert, or magazine spread or that famous celebrity or doctor is telling you about something marvellous…They are laughing all the way to the bank…If it sounds too good to be true…It is!

Well, that’s my not so little spiel over…Will you join me on  Tuesday ???

For delicious healthy recipes???

I hope you do xxx
