Amazing foods of Thailand.




Thai food is known and eaten all over the world and for good reason who doesn’t love Thailands unique cuisine with its sweet, sour, bitter, spicy and salty tastes which combined make a Thai meal so memorable.

Here are a few of my favourite Thai foods and ones which if you do come to Thailand and try that you will love as much as I do.

Some are almost iconic Thai dishes and well known around the world.

I have also added the links to some of them with recipes so if you want to try them at home …I hope I have made it easy for you.

How to make your own Coconut Oil.

Living in the North Of Thailand is so very different from living in the South of Thailand.. I am learning so much about Thai cultures and traditions which have been passed down through families for centuries and I am loving it.

Coconut oil and its benefits are known throughout the world and it is quite easy to buy a bottle from your local shops now….. But how is it made? it is still made by hand in many local homes here..it takes time but you get a far superior product and you also get the lovely by-product which you can eat.

So come with me ……Over a fire…. a pot is put to heat up when the pot is hot then the coconut milk which is extracted from the white flesh is added, in the villages they grate this and as you need the flesh from 10 coconuts to make a litre of oil …it is time-consuming and hard work by hand….

If you  lucky enough to live close to a local market and they have the machine which extracts the milk then it  is far easier although you still have a long way to go before you get the finished product.

Firstly the Coconut milk is  poured into the ready heated pot and it is now a waiting game where all the exciting stuff happens and you can see the stages and transitions that milk goes through to get your oil.

So you sit and stir and watch and wait while still stirring as the milk changes.

The first sign you see are little oil spots which start to appear on the surface of the milk….you still have to keep stirring.

The oil spots spread as the milk bubbles away and indeed will come right to the top of the pot and almost boil over.

So as the milk is coming to the top is not a good  sign you have to stir and stir  so it is simmering and bubbling after a while it takes a few hours the milk disappears and you are left with oil…

At the bottom of the pan you get a thick crust which looks like crumbled digestive biscuits…this is scooped out and kept as a topping for ice cream.

A very small amount is left in the bottom maybe a teaspoonful and this gives the oil a more vanilla/chocolate smell/taste it is then scooped out and the oil is left to cool down.

You now have your very own hand-made  Coconut Oil.

I think it is lovely to see this tradition of making your own oil in the home as so often we buy a carton or bottle and we don’t where it has come from ..what processes it has gone through..Is it pure ? We all know that labelling can be misleading.

I am sampling so much now of lovely home produced oils, honey, vegetables , herbs some grown some foraged and it is not just the marvelous taste but just the knowledge that I have seen it made or helped make it and that I  know where it has come from..it is a marvelous feeling ..

Wow! I just don’t believe it!

I am like many you that when I am offered a new opportunity …I tend to think …Oh yeh!

Well depending on whether you want to increase your reads and followers..it maybe that you want to join Ad- Sense and they like to see what readership you have before they let you join and I am sure others do that as well.

I have been blogging for 2 years now and have met so many lovely people and I love WP its ease of use etc and I have no problem at with it. The odd blip but for a free site  it’s great.

I am thinking of changing to Wp.Org for a few reasons……and I hope that will be fairly trouble free…If anyone has any tips or anything they think I should know before I jump …please let me know.

I am also staring an on-line business so am looking at where I will get the most coverage.

Through social media etc.

Now in 2 years I have had 18,343 reads probably quite small by some  people’s reads but I am happyish with that ….I have some lovely followers.

Niume as you  know I have been writing for since mid November so nearly 3 months. I share my posts to WP as some of you will know and Tweet some, Instagram some and Flipboard most.

It is a lovely site to use and the owners are always doing videos to help us with increase our readership and followers. In fact they are very good. There have few grumbles but in honesty it is small team and they have made lots of improvements and some people just want more and can’t wait. But it’s a good community. The site is a joy to use and we get paid. Paid for everyone who signs up through our own personal link and paid for how many reads we get.

I had an e-mail this morning from them which was as follows…and you can see in 3 months my reads outstrip WP by miles and with not that much additional work from me.

It’s time to go and cook!… I made scones again today and they still don’t taste like my mum’s so it looks like I will making scones everyday until I get them right….so simple yet  so hard to get right…











Blogmas 2016 The 13 Trolls of Christmas!


  What fun..We all love to regale our children and grandchildren with tales from Christmas past…most real, some imagined and we all…Come On…Admit it!

We have all stooped to bribery, corruption or just plain tall tales to make the kiddiwinks BEHAVE!

Forget boring advent calendars….Icelandic parents enthrall their children (and scare) them into being good with tales of the Ogress living in the Icelandic mountains.

She is one scary mumma, described as half troll/animal and the mother of 13 naughty  boys known as the  “Yule Lads”. Grýla lives in the mountains with her  husband, her thirteen children and a black cat.

And that cat is pretty scary to….


Legend goes that every Christmas, Grýla and her sons come down from the mountains: Grýla in search of naughty children to boil in her cauldron and the boys in search of mischief. She can only capture children who misbehave but those who say sorry must be released.

Wow….that story will get the kiddies hiding under the bed covers.

The husband is not as wicked as her…  but a  bone-idle,  lazy slob.

The boys aka “The Yule” lads are naughty and mischievous and have wonderful names…Oh, what stories you could weave….and what fun you could inject into your stories.

And what funny names they have.. Spoon- Licker and Door- Slammer being just two…

Icelandic children place a shoe in their bedroom window each evening in the 13 days before Christmas. Every night one Yuletide lad visits, leaving sweets and small gifts or rotting potatoes(Yuk), depending on how a  child has behaved on that day.

I think It’s much better than a boring advent calendar, just think of the tales you can weave  and what fun you and the kids could have and such a cool way to keep the little darlings in check.

What tales do you tell your children?

I was really lucky…because my youngest believed in Santa Claus until she was about 13 years old…she was much ridiculed by her peers but stood her ground and insisted that she had seen Santa.

Well she had….She was 3 yrs old and one of my sons friends asked if he could ( while dressed) up as Santa take a little present upstairs and put it in Laurens stocking.

He was told by me in no uncertain terms ” Do NOT wake her up”

Well she did wake up..but the clever boy put his fingers to his lips and told  her to shhhhhh   and  go back to sleep or I can’t leave your presents.

Which she did, from that Christmas onwards for many years she was insistent to all and sundry when they laughed and told her Santa didn’t exist…..That she knew he did because she had seen him…so thank  you Adam.for keeping a little girls dreams alive!

I wish I had known about the 13 trolls though….


    Good morning from sunny Thailand….I hope you are all well….

    As you probably know I have been busy on Niume and I have seen few of you there which is lovely…..Well Niume are very proactive for their “Niumers” and last week sent us a short utube video on Flipboard.

    My first thought was …Oh No! Not More…I can’t take it….Well one of my fellow niumers posted that he had great success…..Well….I am not one to pass up a challenge  so I ventured over to FLIPBOARD…….Well eventually because it isn’t compatible with Windows….

    So I had to reinstall Chrome( which) I hate with a passion…..

    Why ????? Because it picks up my IP address and although I set the language to English…. if I copy for example all the text and my headers are in Thai….I don’t read Thai!

    If I google it there are so many comments all saying same and lots of hair tearing out! I spied a U tube video….Yay! I thought….How to change all this to English…Well it was in fr………ing Thai…..Urghhhhh.

    Anyway I digress and have had my rant for the day.


    This post for Asian beef….Got    2.1 K reads …..YES GUYS …..In one day….. 

    It is easy..you sign up, set up a magazine..post your post and that’s it!

    The  easiest thing I have ever done….It seems to me it is just a stepping stone to your posts… a bridge and when anybody opens it, it takes them to your original post. ….Simples as the Meercats say.

    Life in a cardboard box! The Chocolate Run!


    This post was prompted by a friend of mine who wrote a post about poverty in foreign climes and it was a great post, sympathetically, written, backed up by a beautiful video and pictures. It tore at my heart -strings and rightly so.

    It did however bring back memories for me when a good few years ago I was asked by a very dear ( now departed) friend to join her and some others on ” The Chocolate Run”

    The name ‘Chocolate Run’ was coined because the charity  set up over 40 years ago to provide hot chocolate drinks for homeless people in London as well as maintaining a haven during the Christmas period (where food, shelter and clothing was provided to homeless people in need).

    Initially I did not know what to expect … I was told to be ready at 11pm…when normally I would be tucked up in my warm bed with a book,  to wear warm clothes and comfortable shoes and don’t wear any jewelery(apart) from my wedding ring.

    The mini bus was loaded up with urns of ” Hot Chocolate” and sandwiches..donated by local companies.

    What I saw totally astounded me…..I was this girl/woman from a middle class  family, cossetted, blinkered….I don’t know but I honestly wasn’t prepared for what I saw.

    I don’t know if it was the old people or the very young or the obviously well -educated people who now slept on the streets…..What can be made out of a card board box ? I saw for myself and all this was in the affluent park area of Lincolns Inn Fields, London the home of Lawyers, solicitors and the ilk.

    The reason for wearing no jewelery was not fear of robbery but to be sensitive and not flaunt what you had.

    I spoke to men who had lost their businesses, their homes,had a breakdown, abandoned by friends and families, men who were highly educated but fell on bad times..Service men who fought for Queen and country…..How can you apply for a job when your address is the second park bench on the right????

    Children and young people abused so they ran….so sad..because then the unscrupulous prayed on them…

    Damm you..all those who do that to line your pockets or feed your perversions.

    But what impressed me the most in this world of greed and power was when at Christmas in the freezing cold.. and I had a warm bed to go back to….we went armed with packs of a warm pair of sox, gloves,scarves,an Orange, a packet of fags and a lighter.

    If we asked ” Do you want one” you didn’t get an answer…I learnt to just put it in their hands….. The look of thanks ..humbled me….But mostly what humbled me was..The man who said ” Mrs….. I have got one but old Joe over there hasn’t”

    A man who had nothing and lived in a cardboard box…remembered and looked after his friend… I heard that statement more times in that one night than I have since.

    How many of us do that…would you take two….most would….

    This is why I took my children when they were old enough..to show them how in a blink of an eye or circumstance ….It could be them…

    So when you look at all those poor unfortunate people in foreign climes..please also spare a thought for those closer to home….

    This world we live in…this beautiful world….also has another side…..so wherever you are spare a thought, a smile, a touch on the shoulder, a small donation or gift and teach your children to spare a thought….Then hopefully the world will be a better place.

    God Bless all those wonderful organisations  all over the world who work to improve the lives of those less fortunate and also the individuals who do their bit.

    So when you are travelling to all these beautiful places take a closer look…

    Spare a penny!
